Holiday Eggnog Banana Bread Recipe

This Eggnog Banana Bread is a festive twist on the classic banana bread, blending the rich, creamy taste of eggnog with the natural sweetness and moisture of ripe bananas. Ingredients:

  • 1 teaspoon baking soda
  • 2 cups all-purpose flour
  • ½ teaspoon salt
  • 3 ripe bananas, mashed
  • ½ cup Lochmead Farms eggnog
  • ½ cup canola oil
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon ground nutmeg
  • Chocolate chips (duh) as many as you desire.

Instructions:

  • Preheat oven to 350 degrees F.
  • Combine all of the ingredients in a large bowl until well blended; then pour batter into two greased 9×5 loaf pans.
  • Bake for around 50-60 minutes or until the top springs back when touched or a toothpick comes out clean when inserted.

Tips:

Use overripe bananas: The riper your bananas, the sweeter and more flavorful your bread will be. Bananas with lots of brown spots are ideal for this recipe.

Add-ins: While walnuts and chocolate chips are a great addition, feel free to get creative! You can add dried cranberries, chopped pecans, or even swirl in some cream cheese for a tangy twist.

Enhance the spices: If you love spice, increase the cinnamon and nutmeg slightly, or add a pinch of ground cloves or ginger for an even more festive flavor.

Prevent overbaking: Check the bread a few minutes before the recommended baking time is up by inserting a toothpick. The bread should be golden brown on top, and the toothpick should come out clean or with just a few moist crumbs. If the top begins to brown too much, cover the pan loosely with foil and continue baking.

For extra moisture: If you find your bread a little dry, try adding a tablespoon of sour cream or yogurt to the batter. This will enhance the bread’s moisture and add a slight tang that balances the sweetness.

Glaze it: For an extra touch of holiday flair, drizzle the cooled banana bread with a simple eggnog glaze made by mixing powdered sugar and a little eggnog. This adds both sweetness and a festive look!
